Moronidae (Dicentrarchus labrax) is a member of the perch family (Moronidae) and is known as Branzino, Loup de Mar, Lubina, Bar or Wolfsbarsch. The body of a perch is covered with large, regular scales.
Its color varies depending on the origin of the fish, from dark gray, blue or green to the white or light yellow belly on the back. Cheeks are silver-blue, sometimes pale gold or bronze.
It has a medium to solid texture and a medium size flake and a moderate amount of oil content, a light, fresh flavor. The most preferred techniques are Grilling, Roasting, Pans, Steaming, Ceviche
